Recipe: Canna Infused Poutine Fries

Poutine will change the way you eat French fries. Instead of ketchup, these crispy fries are covered with cheese and beef gravy. Poutine can be served as an appetiser or main dish. 


Where do Poutine Fries Originate From?

Poutine originated in Quebec, Canada in the 1950’s, no one knows for sure who actually first came up with the idea but it was an immediate, widespread success with French Canadians and can now be found being served, all over the world. Poutine La Banquise in Montreal sells more than 28 types of the stuff. Unsurprisingly Poutine is now known as one of the most quintessential Canadian dishes.

Ingredients

Traditional poutine consists of 3 major ingredients.

French fries, cheese, and gravy. You can find many interpretations that use more toppings, like shredded beef or other types of meat.

Cannabis Poutine Fries

Ingredients:

  • 7 Potatoes
  • 1.5 Tablespoons Canna Oil
  • 1 minced Clove of Garlic 
  • 1 minced Shallot 
  • 2 Cups Chicken Stock
  • 2 Cups Beef Stock
  • 2 Tbsps Ketchup
  • 1 Tbsp Apple Cider Vinegar
  • 1 Tbsp Whole Green Peppercorns
  • 0.5 Tsp Worcestershire Sauce
  • 2 Tbsp CannaButter
  • 2 Tbsp Flour
  • Salt
  • Pepper
  • 2 Cups Shredded Mozzarella Cheese, or whatever cheese you prefer

Prep Time: 20 minutes

Serving Size: 3-4

Peel the potatoes and slice them into fries. Place in a bowl of cold water for an hour then take them out, and pat dry.

Heat the 1.5 tablespoons of Canna Oil on low-medium heat in a saucepan, then add and sauté the minced garlic and shallot for roughly 3 minutes. Now add the chicken stock, beef stock, apple cider vinegar, ketchup, Worcestershire sauce, and peppercorns and gently bring the mixture to the boil.

In a different saucepan, melt the Canna Butter on medium heat, adding the flour, and stirring until slightly brown. Now pour in your stock mixture and allow to simmer for approximately 20 minutes, stirring occasionally. Add pepper and salt to taste.

Fry your French fries to your preference and then transfer them to a serving dish, sprinkle mozzarella cheese over them until your hearts desire, and then finish by pouring your homemade gravy all over the top and watch as the cheese melts. There you have it, tasty homemade Cannabis Poutine Fries!
