Sweet and chewy with crunchy peanut butter and marshmallows, these may be the most delicious infused cookies you have ever had. Perfect if you have little time or enthusiasm for cooking, these treats are quick and easy to make and require NO baking.


Just mix, shape, and they are ready for eating, all with only eight ingredients that you might even have in your kitchen! Gluten-free? Vegetarian? Don't worry; we have the substitutions for you.

INGREDIENTS

  • 1/2 cup of cannabutter.Ā You can substitute for cannabis coconut oil if required.
  • 2 cups of Granulated sugar: White granulated sugar is ideal.Ā 
  • 1/2 cup of milk:Ā any milk will do traditional dairy or plant-milk substitutes. As a recommendation, I would use whole fat milk or coconut milk as these have the highest fat content, which will bind to cannabinoids well.Ā 
  • 1/4 cup of unsweetened cocoa powder: make sure to use unsweetened, or this recipe may be too sweet.
  • Quick cook oats: Ensure that you use these and not the old-fashioned variety; otherwise, your cookies may turn out hard and chewy.
  • 1/2 cup of Crunchy peanut butter: crunchy or smooth. The chunky texture will help to add to the Rocky Road experience. Are you nut-free? Then try hemp seed butter. You can also use nut or seed butter here.Ā 
  • 1 teaspoon of Vanilla extract:Ā for flavour.
  • 1 cup of Mini-marshmallows:Ā optional but enhances the Rocky Road experience.

METHOD

Step 1:Ā Ā Line two baking trays with the parchment paper.

Step 2: Combine and heat yourĀ cannabutter, milk, sugar and cocoa powder in a saucepan over a low-medium heatĀ 

Step 3: Bring to a rolling boilā€”leave for 1 minute, then turn the heat off.

Step 4:Ā Add your oats, vanilla extract and peanut butter to the pan and stir well.

Step 5:Ā Fold in the marshmallows.

Step 6:Ā Use your cookie scoop or a tablespoon and drop equal amounts of the mix onto the baking parchment.

Step 7:Ā Ā Put the trays in the fridge and allow them to harden for 20-30 minutes.Ā 

Step 8:Ā Ready to eat! Or kept in an airtight container, they should be suitable for about a week.

TIPSĀ 

  • For the best texture, use quick cook oats, not rolled oats.
  • Nut butter or seed butter will work as an alternative to chunky peanut butter.
  • If you don't like marshmallows, use anything else you can think of, and get creative.
  • When heating your cannabutter, use a low/medium heat and only leave on a rolling boil for 1 minute MAX. High temperatures can burn off the cannabinoids in your butter.
  • Suppose you are unsure of dosage when it comes to cannabutter. In that case, there are lots of online dosage calculators that you can use to work out the potency of your butter when you are making it.
  • If it is butter that someone else has made and you are unsure of the potency. Just swap out regular butter in the recipe for 1/2 teaspoon per serving of cannabutter and see the effects. You can then slowly increase from there next time.
  • Remember! Go slow and low to prevent having a bad time! Edibles are very different to smoking weed.
